Gone are the days when I was cooking for hordes on a daily basis. Nowadays, more often than not, I am just cooking for two. You know how it goes, you throw together a quick meal using whatever you have in the fridge and the larder and often, for me, that involves a can of beans. But, delicious as they are, sometimes using a whole can of beans just means there is too much to eat all in one go.
Giving up sugar and wheat does not mean that you have to stop spoiling yourself – in fact it makes the occasional treat all the more important! I have been experimenting with all sorts of ways to make this possible and I’m pretty excited by my latest discovery – a totally delicious gluten, dairy and sugar free apple muffin, made incredible by a luxurious, creamy, lemon cashew frosting.
Oh my goodness gracious, I have just discovered raw chocolate. Powered now with the means and the knowledge to make my own chocolates at home, life will never be the same again.
