Amazeballs – the ultimate power snack!

This is the most fantastic go-to recipe for an all natural, raw, sweet power snack to answer all those snacking urges to self-sabotage that creep up on us in the middle of the afternoon. Simplicity itself, totally delicious and really good for you.

From a nutritional point of view, you can’t get much better than this in the sweet treat department. The raw cacao delivers all sorts of minerals and antioxidents and brazil nuts are a powerful source of magnesium, zinc and selenium, providing these key nutrients in a way that the body can naturally access, along with a hefty dose of protein which offsets the natural sugars in the dates. So here we go – the ultimate health-boosting, good mood treat to knock all your cravings into touch.

Ingredients

  • 100g raw nuts – any nuts will do and I have used walnuts, almonds, pistachios and hazlenuts at times, and you can even have a mixture, but I particularly like Brazil nuts for this recipe
  • 16 pitted medjool dates
  • 50g dessicated coconut
  • 1 tablespoon flax seed
  • 2 heaped teaspoons raw cacao powder
  • 2 tablespoons coconut oil
  • Half a teaspoon vanilla extract

Method

Chuck everything into the food processor and whizz until well combined and the mixture starts clumping.  If you have a weedy little processor like mine, you will have to keep stopping and stirring the ingredients up a bit as this is quite a heavy mixture.  I also like to keep whizzing for quite a bit of time to release the nut oils a bit and really mix everything together well.Fig & Pistachio Amazeballs

When combined roll into approximately 20 little balls and then dust with raw cacao.  As easy as that!
